Tater Tot Casserole


Serves 8

1 1/2 cup milk
3 eggs
1 1/2 cup shredded cheddar cheese
6 ounce deli sliced cooked ham cut into 1/2 inch pieces
32 ounce tater tots
16 ounce thawed frozen mixed vegetables

Preheat oven to 400 degrees. Spray 3 quart baking dish.  Whisk milk and eggs.

Stir in 1 cup cheese and ham.  Set aside 2 cups tater tots.

Stir rest of tots into egg mixture with vegetables.

Pour into baking dish.  Top with remaining tater tots.

Sprinkle with remaining cheese & bake for 45 minutes or until golden.
